Meet the chef and owner behind the vision
Bayou del Mesa was founded by Joe Oliver, a Houston native with deep roots in both Texas and Louisiana culture. Growing up in Humble, Texas, Joe spent his summers surrounded by the rich food traditions, music, and hospitality of Louisiana, developing a love for Creole cooking at an early age.
After graduating from the University of Texas at Austin and building a successful career in corporate leadership, Joe decided to pursue a lifelong dream: creating a food concept that celebrates the flavors that shaped his upbringing. The result is Bayou del Mesa—a unique fusion of bold Creole classics and vibrant Latin influences.
Every dish is inspired by family recipes, Gulf Coast traditions, and the belief that great food brings people together. From fan-favorite Boudin Empanadas to Bayou Street Tacos and Creole-inspired comfort food, Bayou del Mesa is built on creativity, authenticity, and a passion for sharing unforgettable flavors.
Today, Bayou del Mesa serves Houston through its food trailer, catering services, and community events, delivering a one-of-a-kind Creole + Latin Fusion experience that honors the past while creating something entirely new.
